Ingredients:
- 5 eggs
- 280g caster sugar
- 125ml water
- 350g COCOAFAIR Dark Chocolate (Opt for 56% for a sweeter bite or 71% for deep, intense richness – your choice!)
- 225g unsalted butter
Method:
- Preheat your oven to 160°C (fan forced).
- Whip the eggs in a stand mixer for 10 minutes until quadrupled in volume. While whisking, gradually add 100g of the caster sugar.
- Prepare your tin by lining it with baking paper.
- In a saucepan, combine the remaining sugar and water over medium heat, stirring until dissolved.
- Add the butter and chocolate to the syrup and stir until smooth and glossy. Remove from heat and cool slightly until warm to the touch.
- Slowly stream the chocolate mixture into the beaten eggs on low speed. Mix gently by hand if needed to ensure a uniform batter.
- Pour into your tin and bake for 45 minutes.
- Allow the cake to cool completely in the pan before removing.
Don’t worry if it cracks or sinks in the middle – that’s part of its rustic charm!
