Macadamia White Chocolate Blondies with Raspberries

This weekend we decided to celebrate the sunshine with these White Chocolate Blondies. The macadmias add some additional creaminess and the freshness and acidity of the raspberries cut through the sweetness of the white chocolate.

Ingredients you'll need:

125g Butter (chopped)
200g COCOAFAIR 35% White Chocolate
165g Caster Sugar
2 Eggs (beaten lightly)
110g Plain Flour
75g Self-raising Flour
100g COCOAFAIR 35% White Chocolate
75g Macadamias (roasted and roughly chopped)
150g Fresh Raspberries

Once you have all the ingredients ready, let's get baking:
1. Preheat the oven to 160 degrees Celsius (fan-forced)
2. Grease a brownie pan and line the base with baking paper
3. Melt the 200g chocolate and butter in a saucepan over low heat until smooth. Put aside until cool. 
4. Stir in the caster sugar, egg, flour, extra chocolate, macadamias and raspberries.
5. Spoon into the brownie pan and bake 25-30 minutes until firm.
